Anna Banana’s Birthday Cake With Chocolate Fudge Icing

CAKE

1/2 cup unsalted butter

3/4 cup granulated sugar

2 eggs

1 teaspoon pure vanilla extract

3 ripe bananas, mashed

2 cups all-purpose flour

1 teaspoon baking soda

1/4 cup sour cream (preferably Astro)

Heat oven to 350 degrees. Coat a 9 inch spring form pan with greases. Beat ½ cup butter till smooth. Slowly, add sugar. Beat in each egg individually. Add vanilla and mashed bananas. Stir in dry ingredients with sour cream. Pour into pan. Bake for 30 to 40 minutes. Let cool

In a double boiler, melt the chocolate, cocoa, milk, and ¼ cup butter till smooth. Beat in sugar and vanilla. Place over a bowl of ice. Spread over cake.
